Keto Egg Muffins 🥚🧀

Ingredients

  • 6 large eggs
  • 1/4 cup spinach (chopped)
  • 1/4 cup bell peppers (chopped)
  • 1/4 cup mushrooms (chopped)
  • 1/2 cup shredded cheese
  • Salt and black pepper
  • 1 tbsp butter or olive oil

Instructions

Step 1: Prepare Oven

Preheat oven to 180°C (350°F).

Grease a muffin tray with butter or oil.

Step 2: Mix Ingredients

In a bowl:

  • Crack eggs
  • Add vegetables
  • Add cheese
  • Season with salt and pepper

Whisk well.

Step 3: Fill Muffin Tray

Pour mixture evenly into muffin cups.

Fill about 3/4 full.

Step 4: Bake

Bake for 18–20 minutes until fluffy and golden.

Step 5: Serve

Cool slightly and enjoy warm.

You can store them in the fridge for 3–4 days.
