Step-by-Step Instructions
Step 1: Prepare the Oven
Preheat your oven to 190°C (375°F). Line a baking tray with parchment paper.
Step 2: Cook the Onions
Melt butter in a skillet over medium heat. Add the sliced onions and cook for 6–8 minutes until soft and lightly caramelized. Remove from the heat.
Step 3: Make the Biscuit Dough
In a large bowl, combine the high-protein baking mix, baking powder, and Greek yogurt. Stir until a soft dough forms, then knead gently for 1–2 minutes until smooth.
Step 4: Fill the Biscuits
Divide the dough into equal portions and flatten each into a small circle. Place a few slices of roast beef, some caramelized onions, and shredded mozzarella in the center. Fold the dough over the filling and pinch the edges tightly to seal.
Step 5: Bake
Arrange the filled biscuits on the prepared baking tray. Brush the tops with beaten egg and bake for 18–22 minutes, or until golden brown.
Step 6: Prepare the Au Jus
While the biscuits bake, combine the beef broth, Worcestershire sauce, garlic powder, and black pepper in a saucepan. Simmer for 8–10 minutes.
