Ingredients

For the Cranberry Swirl

  • 1 teaspoon lemon juice
  • ½ teaspoon vanilla extract
  • ½ teaspoon orange zest (optional)

For the Yogurt Filling

  • 2½ cups plain Greek yogurt (full-fat for the creamiest texture)
  • 3 tablespoons honey or maple syrup (or keto sweetener)
  • 1 teaspoon vanilla extract
  • Pinch of sea salt

Optional Toppings

  • Chopped pistachios
  • Sliced almonds
  • Unsweetened shredded coconut
  • Freeze-dried cranberries
  • Orange zest

Step 1: Make the Cranberry Swirl

  1. Add the cranberries, water, honey, lemon juice, and orange zest (if using) to a small saucepan.
  2. Place over medium heat.
  3. Cook for 8–10 minutes, stirring occasionally.
  4. As the cranberries begin to burst, gently mash them with the back of a spoon.
  5. Continue cooking until the mixture becomes thick and jam-like.

Step 7: Freeze

  1. Place the tray on a flat surface in the freezer.

  1. If using silicone molds, gently press from the bottom.
  2. If using paper liners, let the bites sit at room temperature for 2–3 minutes before peeling off the liners.
