For the Cranberry Swirl
- 1½ cups fresh or frozen cranberries
- ¼ cup water
- 3 tablespoons honey or maple syrup (or keto-friendly sweetener)
- 1 teaspoon lemon juice
- ½ teaspoon vanilla extract
- ½ teaspoon orange zest (optional)
For the Yogurt Filling
- 2½ cups plain Greek yogurt (full-fat for the creamiest texture)
- 3 tablespoons honey or maple syrup (or keto sweetener)
- 1 teaspoon vanilla extract
- Pinch of sea salt
Optional Toppings
- Chopped pistachios
- Sliced almonds
- Unsweetened shredded coconut
- Freeze-dried cranberries
- Orange zest
Step 1: Make the Cranberry Swirl
- Add the cranberries, water, honey, lemon juice, and orange zest (if using) to a small saucepan.
- Place over medium heat.
- Cook for 8–10 minutes, stirring occasionally.
- As the cranberries begin to burst, gently mash them with the back of a spoon.
- Continue cooking until the mixture becomes thick and jam-like.
- Remove from the heat.
- Stir in the vanilla extract.
- Let the cranberry mixture cool completely before using.
Tip: Chilling the cranberry sauce for 20–30 minutes makes swirling easier.
Step 2: Prepare the Yogurt Mixture
- In a large mixing bowl, combine:
- Greek yogurt
- Honey
- Vanilla extract
- Pinch of sea salt
- Stir until the mixture is completely smooth and creamy.
- Taste and adjust sweetness if desired.
Step 3: Prepare the Mold
- Use a 24-cup mini muffin pan lined with paper liners, or use a silicone mini muffin mold for easy removal.
Step 4: Fill Each Cup
- Spoon about 1 tablespoon of yogurt mixture into each muffin cup.
- Add ½ teaspoon of cranberry sauce on top.
- Add another small spoonful of yogurt.
- Finish with another tiny dollop of cranberry sauce.
Step 5: Create the Swirl
- Insert a toothpick or wooden skewer into each cup.
- Gently swirl the cranberry mixture through the yogurt.
- Avoid overmixing so the beautiful marbled pattern remains visible.
Step 6: Add Toppings
Sprinkle with your favorite toppings, such as:
- Chopped pistachios
- Sliced almonds
- Coconut flakes
- Freeze-dried cranberries
- Fresh orange zest
Step 7: Freeze
- Place the tray on a flat surface in the freezer.
- Freeze for 4–5 hours, or until completely firm.
Step 8: Remove from the Mold
- If using silicone molds, gently press from the bottom.
- If using paper liners, let the bites sit at room temperature for 2–3 minutes before peeling off the liners.
Step 9: Serve
Serve the bites slightly softened for the creamiest texture. They make a refreshing snack, healthy dessert, or quick breakfast on busy mornings.
Storage
- Store the frozen bites in an airtight freezer-safe container.
- Separate layers with parchment paper to prevent sticking.
- Keep frozen for up to 2 months.
Helpful Tips
- Full-fat Greek yogurt creates the richest, creamiest texture.
- Allow the cranberry swirl to cool completely before mixing into the yogurt.
- Silicone molds make removing the bites much easier than paper liners.
- Add a little cinnamon or orange zest to the cranberry mixture for extra flavor.
- For a keto-friendly version, use unsweetened Greek yogurt and your favorite keto sweetener.
