Ingredients
For the Bread Batter
- 2 cups (250g) all-purpose flour
- 2 tsp baking powder
- ½ tsp salt
- ½ cup (115g) unsalted butter, softened
- ¾ cup (150g) granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- ½ cup (120ml) milk
For the Cream Cheese Filling
- 8 oz (225g) cream cheese, softened
- ¼ cup (50g) granulated sugar
- 1 egg yolk
- 1 tsp vanilla extract
For the Berry Swirl
- 1 cup mixed berries (fresh or frozen)
- 2 tbsp sugar
- 1 tsp cornstarch
- 1 tbsp water
- 1 tsp lemon juice
Instructions
Step 1: Prepare the Berry Swirl
- In a small saucepan, combine the berries, sugar, cornstarch, water, and lemon juice.
- Cook over medium heat for 5–7 minutes, stirring frequently, until the berries break down and the mixture thickens.
- Remove from the heat and let it cool completely.
Step 2: Prepare the Cream Cheese Filling
- In a bowl, beat the softened cream cheese until smooth.
- Add the sugar, egg yolk, and vanilla.
- Mix until creamy and set aside.
Step 3: Make the Bread Batter
- Preheat the oven to 350°F (175°C).
- Grease and line a 9×5-inch loaf pan with parchment paper.
- In a bowl, whisk together the flour, baking powder, and salt.
- In another large bowl, beat the butter and sugar until light and fluffy (about 3 minutes).
- Add the eggs one at a time, mixing well after each addition.
- Stir in the vanilla.
- Gradually add the dry ingredients, alternating with the milk, beginning and ending with the flour mixture. Mix just until combined.
Step 4: Assemble the Loaf
- Spread half of the bread batter into the prepared loaf pan.
- Spoon the cream cheese mixture evenly over the batter.
- Add small spoonfuls of the cooled berry mixture over the cream cheese.
- Cover with the remaining bread batter.
- Dollop the remaining berry mixture on top.
- Use a butter knife or skewer to gently swirl the berry mixture into the batter. Avoid overmixing to keep the swirls distinct.
Step 5: Bake
- Bake for 55–65 minutes, or until a toothpick inserted into the bread (avoiding the cream cheese layer) comes out clean.
- If the top browns too quickly, loosely cover it with aluminum foil during the last 15–20 minutes.
Step 6: Cool
- Let the bread cool in the pan for 15 minutes.
- Transfer to a wire rack and cool completely before slicing. This helps the cream cheese layer set for clean slices.
Tips
- Use raspberries, blueberries, strawberries, or blackberries—or a combination—for the berry swirl.
- Frozen berries work well; no need to thaw before cooking.
- For extra flavor, add ½ teaspoon of lemon zest to the bread batter.
- Store leftovers in an airtight container in the refrigerator for up to 5 days. Bring to room temperature or warm slightly before serving.
