Ingredients

For the Chicken

  • 500g boneless chicken thighs or chicken breast
  • 1 tablespoon oil
  • Salt and black pepper to taste

For the Teriyaki Sauce

  • 1/3 cup soy sauce
  • 3 tablespoons honey
  • 2 tablespoons brown sugar
  • 2 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 2 tablespoons water
  • 1 teaspoon cornstarch

Other Ingredients

  • 1 cup pineapple chunks
  • 1 small bell pepper, sliced
  • 1 small onion, sliced
  • Sesame seeds for garnish
  • Green onions, chopped

Step-by-Step Recipe

Step 1: Prepare the Chicken

Wash and pat dry the chicken. Cut it into bite-sized cubes. Sprinkle a little salt and black pepper over the chicken pieces.

Step 2: Make the Teriyaki Sauce

In a small bowl, mix soy sauce, honey, brown sugar, garlic, and ginger. In another tiny bowl, mix water and cornstarch until smooth, then add it to the sauce mixture.

Step 3: Cook the Chicken

Heat oil in a large pan over medium-high heat. Add the chicken pieces and cook for about 6โ€“8 minutes until golden brown and fully cooked from inside.

Step 4: Add Vegetables

Add sliced onion and bell pepper to the pan. Stir and cook for 3โ€“4 minutes until slightly soft but still crunchy.

Step 5: Add Pineapple

Put the pineapple chunks into the pan and cook for 2 minutes. The pineapple will become juicy and slightly caramelized.

Step 6: Pour the Sauce

Pour the prepared teriyaki sauce over the chicken mixture. Stir everything well and let it simmer for 3โ€“5 minutes until the sauce thickens and coats the chicken beautifully.

Step 7: Garnish and Serve

Turn off the heat. Sprinkle sesame seeds and chopped green onions on top.

Serve hot with steamed rice, noodles, or cauliflower rice for a low-carb option.
