For the Chocolate Topping
- 1 cup sugar-free dark chocolate chips or chopped keto chocolate
- 2 tablespoons unsalted butter or coconut oil
- Β½ teaspoon vanilla extract
- Pinch of flaky sea salt, optional
Step-by-Step Instructions
Step 1: Prepare the Pan
Line an 8Γ8-inch square baking pan with parchment paper.
Leave some parchment hanging over the sides so you can easily lift the finished bars out.
Step 2: Toast the Crunch Ingredients
Place the shredded coconut, chopped almonds, and coconut flakes in a dry skillet.
Toast over low to medium heat for 3β5 minutes, stirring frequently.
Remove from the heat once lightly golden and fragrant.
Be careful because coconut can burn quickly.
Step 3: Make the Keto Base Mixture
Add the almond butter and butter to a small saucepan.
Heat over low heat until melted and smooth.
Stir in the powdered sweetener, vanilla, and salt.
Mix until completely combined.
Step 4: Combine
Pour the warm almond-butter mixture over the toasted coconut and almonds.
Stir thoroughly until everything is evenly coated.
The mixture should be moist and sticky enough to hold together when pressed.
Step 5: Press Into the Pan
Transfer the mixture to the prepared pan.
Press it down very firmly into one even layer.
Use the bottom of a measuring cup or the back of a spoon to compact it.
Place in the refrigerator while making the caramel.

Step 6: Melt the Butter
Add the butter and allulose to a small heavy-bottomed saucepan.
Heat over medium-low heat, stirring frequently.
Allow the butter to melt and the sweetener to dissolve.
Step 7: Add the Cream
Slowly pour in the heavy cream while stirring.
Bring the mixture to a gentle simmer.
Cook for approximately 5β8 minutes, stirring frequently, until it becomes thicker and slightly darker.
Don’t use high heat because the caramel can burn quickly.
Step 8: Finish the Caramel
Remove the saucepan from the heat.
Stir in the vanilla and salt.
Allow the caramel to cool for about 5 minutes so it isn’t extremely hot when poured over the base.
Step 9: Add the Caramel Layer
Pour the caramel evenly over the chilled crunch base.
Spread it gently with a spatula.
Return the pan to the refrigerator for approximately 30β45 minutes, or until the caramel is firm enough to support the chocolate.

Step 10: Melt the Chocolate
Place the sugar-free chocolate and butter or coconut oil in a microwave-safe bowl.
Microwave in 20-second intervals, stirring after each interval.
Continue until smooth and glossy.
Stir in the vanilla.
Step 11: Add the Chocolate Layer
Pour the melted chocolate over the caramel.
Spread evenly from edge to edge.
Sprinkle a tiny amount of flaky sea salt over the top if desired.
Step 12: Chill Completely
Refrigerate for 2β3 hours, or until the chocolate and caramel are completely firm.
For the cleanest slices, chilling overnight works even better.
Step 13: Cut Into Bars
Lift the chilled slab from the pan using the parchment paper.
Let it sit at room temperature for about 5 minutes.
Cut into 16 bars using a sharp knife.
For neat edges, warm the knife slightly, wipe it dry, and slice.
Storage
Refrigerator: Store in an airtight container for up to 7 days.
Freezer: Freeze for up to 2 months. Separate layers with parchment paper.
Let frozen bars sit at room temperature for several minutes before eating.
Keto Tips
- Use allulose for the caramel layer for the smoothest texture.
- Avoid regular honey, corn syrup, brown sugar, and oats.
- Choose chocolate with no added sugar and check the nutrition label for total carbohydrates.
- Almond butter should ideally contain only almonds and salt.
- For even more crunch, add 2β3 tablespoons of chopped pecans.
- If you prefer a softer caramel, add an extra tablespoon of heavy cream.
