Step-by-Step Method
Step 1: Mix the Dough
In a large bowl, combine the warm water and sourdough starter. Stir until the starter dissolves. Add the bread flour and mix until a rough dough forms. Cover and let it rest for 30 minutes.
Step 2: Add Salt and Oil
Sprinkle the salt over the dough and add olive oil. Knead the dough for 5–8 minutes until smooth and elastic.
Step 3: First Rise
Place the dough in a lightly oiled bowl. Cover with a towel or plastic wrap and let it rise at room temperature for 4–6 hours until puffy.
Step 4: Cold Fermentation
Transfer the dough to the refrigerator and let it ferment overnight or up to 24 hours. This gives the pizza dough a rich sourdough flavor.
Step 5: Divide the Dough
Remove the dough from the fridge and let it sit for 30 minutes. Divide into 2 equal dough balls and shape them gently.
Step 6: Shape the Pizza
Dust your surface with flour. Stretch each dough ball into a pizza shape using your hands. Avoid using a rolling pin to keep the dough airy.
Step 7: Add Toppings
Place the dough on a pizza tray or baking stone. Add pizza sauce, cheese, and your favorite toppings.
Step 8: Bake
Preheat the oven to 250°C (480°F). Bake the pizza for 10–14 minutes until the crust is golden brown and crispy.
