🥖 Homemade French Baguettes
Crispy Crust, Chewy Center & Full of Flavor
These homemade French baguettes have a beautifully crisp golden crust and a light, chewy center. They’re made with simple ingredients and are perfect with butter, soup, sandwiches, or just fresh from the oven.
Ingredients
- 3 ½ cups (440 g) bread flour
- 1 ½ cups (360 ml) lukewarm water
- 1 ½ teaspoons salt
- 1 teaspoon instant yeast
- 1 teaspoon honey or sugar
- A little extra flour, for shaping
Step-by-Step Instructions
1. Mix the Dough
In a large mixing bowl, combine the lukewarm water, yeast, and honey. Let it sit for about 5 minutes.
Add the bread flour and salt. Mix with a wooden spoon or your hands until a shaggy, sticky dough forms.
Don’t worry if the dough looks rough at this stage.
2. Rest the Dough
Cover the bowl with a clean kitchen towel or plastic wrap and let the dough rest for 20–30 minutes.
This short rest allows the flour to absorb the water and makes the dough easier to develop.
3. Develop the Dough
Instead of heavy kneading, use the stretch-and-fold method.
With slightly wet hands, grab one side of the dough, stretch it upward, and fold it over the center. Turn the bowl and repeat on all four sides.
Do this every 20 minutes for about 1 hour.
The dough will gradually become smoother and more elastic.
4. First Rise
Cover the bowl and let the dough rise at room temperature for about 1½–2 hours, or until it looks noticeably puffy and has increased in size.
For better flavor, you can refrigerate the dough overnight after this stage.
5. Divide the Dough
Lightly flour your work surface and gently turn out the dough.
Divide it into 3 equal pieces.
Be gentle—you want to keep as much air in the dough as possible.
6. Pre-Shape
Shape each piece into a loose rectangle or short log.
Cover the pieces with a clean towel and let them rest for 15–20 minutes. This makes final shaping much easier.
7. Shape the Baguettes
Take one piece of dough and gently flatten it into a rectangle.
Fold the top third toward the center and press lightly. Fold the bottom third upward and press again.
Then fold the dough in half lengthwise and seal the edge firmly.
Roll it gently with your hands until it becomes about 14–16 inches (35–40 cm) long.
Repeat with the remaining pieces.
8. Final Proof
Place the shaped baguettes on a floured baguette tray, parchment paper, or a lightly floured kitchen towel.
Cover loosely and let them rise for about 30–45 minutes.
They should look slightly puffy but still have some spring when gently touched.
9. Preheat the Oven
While the baguettes are proofing, preheat your oven to 475°F (245°C).
Place a sturdy empty baking pan on the bottom rack. You’ll use it to create steam.
If you have a baking stone or baking steel, preheat it as well.
10. Score the Baguettes
Carefully transfer the baguettes to your baking surface.
Using a very sharp knife or bread lame, make 3–4 long diagonal cuts along the top of each baguette.
Make quick, confident cuts at a slight angle.
11. Create Steam
Place the baguettes in the oven.
Immediately pour about 1 cup of hot water into the preheated empty pan on the bottom rack and quickly close the oven door.
The steam helps create that classic thin, crispy French crust.
Be careful when adding water—the steam will be very hot.
12. Bake
Bake at 475°F (245°C) for 10 minutes.
Then carefully remove the steam pan or release the steam, lower the temperature to 450°F (230°C), and continue baking for another 10–15 minutes.
The baguettes should be deep golden brown and sound hollow when tapped underneath.
13. Cool
Transfer the baguettes to a wire rack and let them cool for at least 20–30 minutes before slicing.
Although they smell amazing, letting them cool helps the inside finish setting properly.
🥖 Tips for Perfect Baguettes
- Use bread flour for the best chewy texture.
- Don’t add too much flour—the dough should remain slightly sticky.
- Handle the dough gently to preserve the air bubbles.
- Give the dough enough time to rise; rushing the fermentation can reduce flavor.
- Steam is important for achieving a crisp, bakery-style crust.
- For deeper flavor, refrigerate the dough overnight before shaping.
