Fluffy Keto Pancakes
These keto pancakes are soft, fluffy, lightly sweet, and made without regular flour or added sugar. They’re delicious with butter, berries, or a drizzle of sugar-free syrup.
Ingredients
- 1 cup almond flour
- 2 tablespoons coconut flour
- 2 tablespoons granulated keto-friendly sweetener
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 2 large eggs
- 1/3 cup unsweetened almond milk
- 1 teaspoon vanilla extract
- 2 tablespoons melted butter, plus extra for cooking
Instructions
1. Mix the dry ingredients
In a medium bowl, whisk together the almond flour, coconut flour, keto sweetener, baking powder, and salt.
2. Add the wet ingredients
In another bowl, whisk the eggs, almond milk, vanilla extract, and melted butter until smooth.
3. Combine the batter
Pour the wet mixture into the dry ingredients. Stir gently until everything is combined. Let the batter rest for 2–3 minutes so the coconut flour can absorb some of the moisture.
4. Check the consistency
The batter should be thick but pourable. If it seems too thick, add 1–2 tablespoons of almond milk.
5. Heat the pan
Place a nonstick skillet or griddle over medium-low heat. Lightly grease it with butter.
6. Cook the pancakes
Pour about 2 tablespoons of batter onto the pan for each pancake. Cook for about 2–3 minutes, until the edges look set and bubbles begin to appear on top.
7. Flip carefully
Gently flip each pancake and cook for another 1–2 minutes, until golden and cooked through.
8. Serve
Repeat with the remaining batter. Serve warm with butter, a few low-carb berries, chopped pecans, or sugar-free maple syrup.
Tips for Perfect Keto Pancakes
- Keep the heat medium-low because almond flour can brown quickly.
- Make smaller pancakes—they’re much easier to flip.
- Don’t press the pancakes down after flipping; this helps keep them fluffy.
- Letting the batter rest for a few minutes gives the coconut flour time to thicken it.
Serving
Makes approximately 8–10 small pancakes.
Storage
