🍰 Keto Foolproof Dessert
A rich, creamy and super-easy keto dessert made without sugar or flour. It has a buttery almond-flour crumb layer and a smooth vanilla cream cheese filling. Perfect for when you want something sweet while keeping carbs low.
Ingredients
For the Keto Crumb Layer
- 1½ cups almond flour
- 3 tablespoons unsalted butter, melted
- 2 tablespoons powdered erythritol or monk fruit sweetener
- ½ teaspoon vanilla extract
- Pinch of salt
For the Creamy Filling
- 8 oz (225 g) cream cheese, softened
- 1 cup heavy whipping cream, cold
- ⅓ cup powdered keto-friendly sweetener
- 1 teaspoon vanilla extract
- ½ teaspoon lemon juice
- Pinch of salt
Optional Topping
- A few fresh raspberries or strawberries
- Unsweetened shredded coconut
- Sugar-free chocolate shavings
- A small drizzle of melted sugar-free chocolate
Step 1: Prepare the Keto Crumbs
- Add almond flour, powdered sweetener, and salt to a bowl.
- Pour in the melted butter and vanilla extract.
- Mix until the mixture looks like moist, buttery crumbs.
- Taste a small amount and add a little more sweetener if needed.
Step 2: Toast the Crumb Mixture
- Heat a nonstick skillet over low-medium heat.
- Add the almond-flour mixture.
- Cook for about 4–6 minutes, stirring frequently.
- Stop when the crumbs become lightly golden and smell nutty.
- Remove from the heat and let them cool completely.
Tip: Don’t leave the crumbs unattended because almond flour can brown quickly.
Step 3: Make the Cream Cheese Filling
- Place softened cream cheese in a large bowl.
- Beat until completely smooth.
- Add the powdered keto sweetener, vanilla extract, lemon juice, and salt.
- Beat again until creamy and well combined.
Step 4: Whip the Cream
- Pour the cold heavy whipping cream into a separate bowl.
- Beat until stiff peaks form.
- Do not overbeat, or the cream can become grainy.
Step 5: Combine the Filling
- Add about one-third of the whipped cream to the cream cheese mixture.
- Gently fold it in.
- Add the remaining whipped cream in two additions.
- Fold gently until the mixture is smooth, fluffy, and creamy.
Step 6: Assemble
- Spoon a layer of the cooled keto crumbs into the bottom of a serving dish or individual glasses.
- Add a layer of the creamy filling.
- Repeat the crumb and cream layers.
- Finish with a layer of the creamy filling on top.
Step 7: Chill
Cover and refrigerate for at least 3–4 hours.
For the best texture, refrigerate overnight. The dessert will become thicker and the almond crumbs will soften slightly.
Step 8: Decorate and Serve
Just before serving, top with a few raspberries, shredded coconut, or sugar-free chocolate shavings.
Serve chilled.
Keto Tips
- Use powdered sweetener so the filling stays smooth.
- Avoid regular condensed milk, sugar, graham crackers, and digestive biscuits.
- Choose a keto-friendly sweetener such as erythritol, monk fruit, or an allulose blend.
- Keep fruit portions small because berries contain natural carbs.
- For the lowest-carb version, skip the fruit topping.
