Ingredients

  • 1 tablespoon olive oil
  • 500g ground beef or chicken
  • 1 small onion, chopped
  • 2 garlic cloves, minced
  • 1 small bell pepper, diced
  • 1 teaspoon paprika
  • 1 teaspoon chili powder
  • ½ teaspoon cumin
  • Salt and black pepper to taste
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 2 cups shredded cheddar cheese
  • 100g cream cheese
  • 1 small can diced tomatoes (low carb)
  • Jalapeño slices for topping
  • Fresh cilantro for garnish

Step-by-Step Instructions

Step 1: Cook the Meat

Heat olive oil in a large pot over medium heat. Add the ground beef or chicken and cook for 5–7 minutes until browned. Break the meat apart while cooking.

Step 2: Add Vegetables

Add chopped onion, garlic, and diced bell pepper to the pot. Stir and cook for about 3–4 minutes until the vegetables soften and become fragrant.

Step 3: Add the Spices

Sprinkle in paprika, chili powder, cumin, salt, and black pepper. Mix well so the meat and vegetables are fully coated with the spices.

Step 4: Pour in the Broth

Slowly pour the chicken broth into the pot and stir everything together. Let the soup simmer for 10 minutes on low-medium heat.

Step 5: Add Tomatoes and Cream Cheese

Add diced tomatoes and cream cheese to the soup. Stir continuously until the cream cheese melts smoothly into the broth.

Step 6: Make It Creamy

Pour in the heavy cream and mix gently. Let the soup cook for another 3–4 minutes without boiling too hard.

Step 7: Add the Cheese

Slowly add shredded cheddar cheese while stirring constantly. The soup will become thick, creamy, and cheesy.

Step 8: Final Touches

Taste the soup and adjust salt or spice if needed. Add jalapeño slices for extra heat.

Step 9: Serve and Enjoy

Pour the hot soup into bowls and garnish with fresh cilantro and extra cheese on top. Serve warm and enjoy!

Serving Tip

This soup tastes amazing with avocado slices or crispy bacon bits on top 🥑🥓
