Creamy β€’ Fruity β€’ High-Protein Dessert

This Raspberry White Chocolate Protein Mousse is a light, creamy dessert with sweet white chocolate, tangy raspberries, and a smooth, fluffy texture. It’s easy to prepare, requires no baking, and makes a delicious treat for dessert lovers looking for a protein-rich option.

Recipe Details

  • Prep Time: 15 minutes
  • Chilling Time: 1–2 hours
  • Total Time: 1 hour 15 minutes to 2 hours 15 minutes
  • Servings: 4
  • Category: Dessert
  • Method: No-bake

Ingredients

For the mousse

  • 1 cup (225 g) plain Greek yogurt
  • 1/2 cup (120 g) light cream cheese, softened
  • 1 scoop (30 g) vanilla protein powder
  • 3 oz (85 g) white chocolate, melted and slightly cooled
  • 1/2 cup (60 g) fresh raspberries
  • 1 teaspoon vanilla extract
  • 1–2 tablespoons powdered sweetener or honey, optional
  • 2 tablespoons milk, as needed

For the topping

  • 1/4 cup (30 g) fresh raspberries
  • 1 tablespoon white chocolate shavings
  • 1 teaspoon crushed freeze-dried raspberries, optional

Step-by-Step Instructions

Step 1: Prepare the raspberries

Wash the fresh raspberries gently and pat them dry. Mash them with a fork until they form a chunky puree. Set aside a few whole raspberries for decorating.

Step 2: Melt the white chocolate

Break the white chocolate into small pieces and melt it in the microwave in 15–20-second intervals, stirring between each interval. Let it cool slightly before adding it to the mousse mixture.

Avoid adding hot chocolate directly to the yogurt mixture, as it can cause the texture to become uneven.

Step 3: Mix the cream cheese

Add the softened cream cheese to a mixing bowl. Beat until smooth and creamy, with no lumps remaining.

Step 4: Add the protein ingredients

Add the Greek yogurt, vanilla protein powder, and vanilla extract. Mix until the ingredients are fully combined.

If the mixture is too thick, add milk one tablespoon at a time until it reaches a smooth, mousse-like consistency.

Step 5: Add the white chocolate

Slowly pour the cooled melted white chocolate into the yogurt mixture while stirring continuously. Mix until the mousse becomes smooth and creamy.

Taste the mixture and add powdered sweetener or honey if desired.

Step 6: Fold in the raspberries

Gently fold the mashed raspberries into the mousse. For a beautiful pink swirl, avoid mixing completely so that streaks of raspberry remain visible.

Step 7: Portion the mousse

Divide the mousse evenly among four small dessert glasses or bowls. Smooth the tops with a spoon.

Step 8: Chill until set

Cover the glasses and refrigerate for at least 1–2 hours. Chilling helps the mousse firm up and allows the flavors to blend.

Step 9: Garnish and serve

Before serving, top each portion with fresh raspberries, white chocolate shavings, and crushed freeze-dried raspberries if desired. Serve chilled.

How to Store

  • Refrigerator: Store covered in an airtight container or individual dessert glasses for up to 3 days.
  • Freezer: Freeze for up to 1 month in freezer-safe containers. Thaw in the refrigerator before serving; the texture may become less airy.
  • Make ahead: Prepare the mousse the night before and add the toppings just before serving.
  • Food safety: Keep refrigerated and avoid leaving the mousse at room temperature for more than 2 hours.

Is this recipe keto? No, not in its standard form. White chocolate, raspberries, and regular protein powder can contribute significant carbohydrates. For a lower-carb version, use a low-carb protein powder, sugar-free white chocolate, full-fat Greek yogurt in a suitable quantity, and a keto-friendly sweetener. Calculate net carbs using your specific ingredients.

Final Thoughts

Raspberry White Chocolate Protein Mousse is a delicious combination of creamy white chocolate and bright raspberry flavor. The Greek yogurt and protein powder give it a protein boost, while the no-bake preparation makes it convenient for busy days, meal prep, or an easy after-dinner dessert.

For the best results, use good-quality white chocolate, allow the mixture to chill thoroughly, and add fresh raspberries just before serving. Each spoonful delivers a smooth, fruity, and satisfying dessert experience.
